This fundamental study is focused on evaluating commercial solid catalysts, Amberlyst, with different water adsorption capacities, as a measure of the competition of the water molecules with carbohydrates for catalyst active sites, in order to predict the yield of HMF from fructose by determining the properties of the catalysts.
